Sauerkraut

Our weather went from 62 degrees yesterday to 30 degrees today and 3 inches of snow this morning. Seems like a perfect day to start a new batch of sauerkraut. Eating just a Tablespoon of sauerkraut daily is a great way to get natural, healing probiotics. Most store-bought kraut won’t have the probiotics because they are heat pasteurized, which kills the probiotics. Making your own is easy, fun, super nutritious, and very economical.

Check out Sally Fallon’s book, Nourishing Traditions or the book Wild Fermentation to find more great fermented recipes.
