Rice Mayhem

Because of the health plan I’m currently on I don’t eat rice, but my husband does and usually he’s a great rice cooker. But yesterday he was multi-tasking and got his rice to water ratio off. When making rice it is usually 1 cup rice to 2 cups liquid (water, broth, or a combo of both). He had 1 cup rice to 4 cups water. When he realized his mistake he thought it was ruined and he needed to star over. Not really. We left the rice to cook in its overabundance of water with the lid left slightly ajar so it wouldn’t spill over and checked it at the 40 minute mark. It was perfect except for the extra water left. No problem. We strained it through a fine sieve then put the rice back in the pot where we let it sit for 10-15 minutes which allowed the rice to *dry* out a bit. Then we fluffed it with a fork and voila! perfect rice.
